Acanthus mollis 'Whitewater', is a spectacularly variegated cultivar of Bear's Breeches with endlessly variable foliage that can be cream, white or dramatically bi-coloured with both green and white or green and cream. Each leaf is unique. The leaves that are totally devoid of chlorophyll provide no photosynthesis for the plant and it relies on its green parts to do this. The infloresence is usually completely without chlorophyll and rises like a pale ghost often with tints of pink in its bracts. Absolutely amazing! Unsurprisingly, Acanthus mollis 'Whitewater' is not as robust as the type species and is usually smaller in stature and less vigourous. It will nonetheless draw appreciative and envious glances from many of your garden visitors, particuarly those seeing it for the first time.
